Quinoa Pudding and a Walk on the Beach
I have talked about my love for arroz con leche many times in this blog. It is one of the desserts I make the most and the one that my friends always request when they come over for dinner. “Arroz con leche with two galletas please”, says our friend G. Galletas Marias that is.
Lately I have been experimenting with different grains, mainly because of health reasons. Each one of my pregnancies has taken a bit of a toll on my body and I believe nourishment and food is one of the main ways to bring it back to balance. So a couple of weeks ago, I decided to make a different version of my favorite dessert by incorporating quinoa into it.
The weather has been gorgeous and last Friday, after we dropped J. off at school, we went down to the Juno Beach pier for an early morning walk. It was windy, the sea was rough and it was a pleasure to watch the surfers ride the waves. We even spotted a swimmer in that crazy ocean and there was even a “danger: sharks” note on the blackboard.
M. loves falling asleep in her front carrier while she watches everything around her.
We skipped breakfast that morning so we could have a small picnic at the beach. I made a small batch of quinoa pudding the night before, packed some strawberries and some pistachio and millet tea cakes that I had put away in the freezer. No walk on the beach is complete without snacks right? The wind was too harsh and it spoiled our picnic plan a bit. Instead we ended up sitting at the tables in the parking lot… but we enjoyed it anyway.
Quinoa Pudding with Macerated Strawberries and Pistachios
I like mine a little bit more liquid. If you like a drier version, omit the heavy cream
makes about 4 8 oz servings
3 cups whole milk
1 cup heavy cream (optional)
1 vanilla bean
1/4 cup sugar
pinch of salt
1 cup quinoa
1 cup strawberries, diced
1 Tbs sugar
chopped pistachios
Place the quinoa in a strainer and rinse it with cold water for a few seconds.
Combine the milk, cream, sugar, salt and vanilla bean in a medium saucepan and bring to a simmer. Add the quinoa and stir. Reduce heat to medium low, cover the pot slightly, and cook for about 30 minutes stirring every few minutes. If skin starts to form on top of the milk, just stir it back in. The milk will reduce and thicken. Ladle into bowls or jars.
Place cut strawberries in a bowl and sprinkle them with sugar. Toss them and let them sit at room temperature for about an hour until juices start to come out.
Top the puddings with the strawberries and chopped pistachios.
This looks amazing and will have to try it!!
you have the most beautiful blog! that quinoa pudding looks amazing! xo! :)
Oh Aran! Such gorgeous and stunning pictures as always. I love the way you evoke feelings and memories in me through your photos. And what a great way of using quinoa – great post!
That looks amazing and easy too..will definitely try it..
BTW i want to compliment you on ur photographs..They are so catchy that they make me drool..
Good Luck!
I am intrigued that it has thickened. I will have to try this recipe. It will be my first time to try Quinoa as a dessert. Amazing pictures. Merci.
Wonderful idea! I’ve recently started making quinoa at home after tasting it at various restaurants and loving it. Never did it occur to me to make it as arroz con leche, which I happen to love as well. I’m adding this to the quinoa recipes I’ve been collecting.
Just beautiful. I haven’t tried quinoa as a dessert. I should try it one of these days.
This pud must also be good for a Valentine treat! Lovely colour :)
ahhh Aran, despertarse y descubrir un nuevo post en tu blog es todo un placer! tus fotos se comen con los ojos! me encanta la quinoa, así que estoy deseando probar tu receta, gracias!
Your photography is outstanding. But, please tell me more about “quinoa”. I have seen it as an ingredient in many places but have been unable to find it in my local market nor get a description of it’s flavor and texture.
Awesome! I’ve never try quinoa, but I will. I’m intrigued on your drink, that’s is lemonade with rosemary?
I was also wondering about the drink you have pictured! It looks delicious!
That pudding must be delicious! Lovely shots!
Cheers,
Rosa
ah, i truly believe in food as medicine. this looks lovely.
karine- for arroz con leche i use much more milk than with this one. i also added heavy cream to thicken it some more.
Lynette- quinoa is a grain the size of couscous. it has a rich earthy flavor and when cooked it has firmer texture than rice. there is black, white and red quinoa although i have never cooked the black one.
Anonymous- it is lemonade with thyme in it.
Thank you all. Try it and let me know what you think.
Arin, I love quinoa; thanks for this beautiful presentation. The baby is certainly growing and she is so so so gorgeous. Warm wishes & XXOOXX’s Marsha
My goodness, your photographs are amazing! I get so inspired by them. Thank you!

This time of year is my favorite at the beach because its so much calmer than summer.
Gorgeous. Also, I’ve never seen quinoa used this way and I just love it!
Each time I visit your blog and see a new post I feel simple happiness… today I smiled, breathed deeply, and pulled out the bar stool in my kitchen to sit down and read. This pudding sounds lovely, as does the walk on the beach. Thank you for making life a bit more beautiful with each post.
Beautiful photos and delicious recipe. Tomorrow it will on the table for dessert.
Thanks Aran always looking forward to reading your amazing posts.

Thank you for this post. My heart needed this visual escape, and I love the beautiful way you used quinoa. :-)
I love Quinoa but have never thought of serving it in a sweet version. Since my children like quinoa, they should like it for dessert! Thanks!
Il se dégage de ces photos une atmosphère apaisante et délicieuse…
Una fotografía que hace soñar. Un postre delicioso.

Hi,
I live in Istanbul, Turkey and love your blog. This recipe looks nice and easy like some of the others. But we do not have quinoa here in Turkey. Do you think it would be Ok to use semolina instead of quinoa. Or would you recommend something else…
thanks and best wishes
Pinar
Here in Paris, it’s snowing. If only I could escape in your photos !
Yum! I love quinoa and am always looking for gluten-free options. Everything sounds so lovely.
A walk on the beach would be just perfect right now. I am wishing the weeks away until our Florida vacation. Delicious food and wonderful photography as always.
I am so excited to try this one – I have so much quinoa at home but I never really know what to do with. Thank you very much!
Once more, well done, Aran! I can’t wait to try this yummy recipe, as my girlfriend and I have been wanting to experiment with quinoa for a little while (after drinking delicious coco and quinoa milk).
I also want to say that your blog is definitely a favorite of mine! I like your posts as a whole (gorgeous pics included), and the story behind each of them.
Don’t ask me why, I feel relaxed coming here after a day at work.
Oh, and M is definitely a cute little baby :)
Red shoes!! Don’t you love them (I’m assuming that they are yours, but whoever wears red shoes to the beach holds a special place in my heart)!!
I like the look of that pistachio and millet cake, what a lovely shade of green! I never thought about putting something like quinoa in something like a pudding, but I suppose in makes sense, as it adds a lovely texture. I love it!!
Pdenizer- not sure about semolina. the texture is different and will cook differently. why don’t you try my arroz con leche recipe? it’s rice and milk. very easy and delicious.
Thank you all!
It all looks amazing. I love quinoa and am anxious to try this recipe. Would you consider posting the recipe for the pistachio and millet tea cakes? They look soooo good!
Thanks for a lovely post as always.
The pictures came out beautiful. M is a little doll. I hope everyone is feeling better soon.
I love quinoa and have just made a salad out of it! This looks incredibly delicious. I’ve got half a bag left so I’d definitely be trying this out. The gorgeous photos on your blog make me feel like having a holiday…
Great dessert. I make a different version of it with Quinoa flour for my daughter who is 15 months and she loves it.
Stunning photos! Appetizing dessert! Darling baby!!!
Hello Aran,
First itme on your blog!! Wow!! What can I say? It is incredible…also some of your desserts are very meaningful to me..I come from a Spanish family 100%, (Vascos, Gallegos, y de Logrono) so your “arroz con leche”, rosca de reyes, churros…are all part of my childhood in Argentina, and “quinoa” comes from our Andes…so..!
I love your photos too but the “thing” I loved the most was “your baby” Qué tesorito !!!!!! Felicitaciones !!
Hasta me dieron ganas de tener otro …(No, ya tengo 3, y ni edad para eso!)
Te felicito !! Con tu familia y carrera, has triunfado!
Un beso,
Cristina, from Buenos aires to Paris
Qué tonta he sido !!!!
Este es mi sitio actual ! Perdon!
I’ve been making a lot of rice pudding recently, so warming for this time of year, but had never thought about using quinoa. Very clever.
Rachelle- I am still testing it to make it really good. It was good but I want to try one more adjustment to see if that will make it excellent. Shall post then.
Thank you so much everyone!
What delightful photographs – thank you for posting them so we could enjoy your walk on the beach with you!
I can’t wait to try this recipe – quinoa’s one of my favorite grains and I’m always on the look out for new ways to use it.
Thanks for the recipe.
I love the photos! IS that Lemonade in there?
I was doing a bit of blog-hopping and found you by happy accident! What a beautiful blog you have, my mouth was watering with all the wonderful things you make, and the photography is very inspiring.
Im going to add you to my follow list, so I can come back and drool some more another day!
Much love

I am so jealous that you can even consider taking a walk on the beach or having a picnic. We had snow again yesterday and even though the sun is shining and sparkling I am ready for winter to be over. Love the quinoa pudding idea. I bought quinoa but haven’t used it yet. I hope to make this for breakfast tomorrow.
Your blog is one of my “Go To” places when I need inspiration. Such beautiful photographs and interesting recipes. I’ve never tried quinoa and the combination of lemonade and thyme is not one I’ve heard of before. I may give them a try. Thanks!
just had it with rice ;) and with salsa de frutas del bosque :) really…your blog made my new obsession :))) cooking all the beautiful, new, exciting, fresh healthy and yummy things :) maybe some day ill be brave and skillful enough to start my own blog :)
i would sooo eat some strawberries now..:( but we’re covered in snow here :(
I always love being by the beach even if the wind can sometimes get in the way. Although at the moment it is freezing cold so that wind would probably make it unbearable, but I am talking summerwind here!
I love the idea of that quinoa pudding!
Aran, the pudding looks lovely. And so does your baby (not sure if it’s a boy or a girl).
Nisrine
I just bought quinoa for the first time of my life and I find here a perfect way to cook it! Yummy!!
Gracias por las fotos de la playa, son espectaculares. Miren Lili está muy bonita, tiene una carita preciosa.
Muxu haundi bat
Wow – I ike the way you have paired the pistachio and millet cake with the grass coming through the dunes – echoing the wheat and green colours.
The photo of Miren is gorgeous too – she seems to be really intent on exploring the world!
With best wishes,
Margaret UK

Fantasticas fotos y riquisima receta como cada día
Oooh! I am saving this recipe…I am always happy to find more quinoa recipes, especially one as delicious as this!
You little girl is adorable! What a pretty photo!
I love the outdoor pictures. I tasted quinoa first time about a month ago and I love it. I didn’t think about using it for a sweet dessert though. I have to try it. Sounds truly intriguing. Little M is so cute!
Aupa Aran, ez dozu ipiniko Karnabal Tostadaren errezetarik?

thanks all. getting ready for weekend camping trip. hope you have a great weekend!
I am a quinoa woman! I love it and go a bit crazy with it in the summer when I have so many fresh herbs and tomatoes. We eat amaranth alot for breakfast and I don’t know why I haven’t thought of using quinoa! Thanks for the great idea.
Oh- and seriously…stunning photos. They make me wanna’ slap somebody.

This looks wonderful! I have been trying to find some fun new quinoa recipes, since I’m pretty texture-picky and don’t always love the way it turns out. But this looks creamy and wonderful. I am actually wondering how it might work with soy milk… I make rice pudding with vanilla soy milk and it is SO yummy (and safe for my lactose sensative family)!
Love the beach photo’s! captures a perfect day!
AND lovely pudding!
Your post reads like a fairytale. Very breezy, very soothing.
I’d like to have a taste of that quinoa pudding, really.
I just tried your arroz con leche recipe and loved it. Thanks for sharing! I’m definitely going to try out your other recipes!
oooh, i am smitten! the only thing i might be more excited about than making quinoa pudding is pistachio and millet tea cakes…can you kick down a recipe for this gluten-free girl??? i am a millet freak. quinoa as hot cereal in the morning runs a pretty close second.
i will definitely be making this pudding!
great photos. I love the Quinoa desert.

It’s like you read my mind literally with this recipe, I’ve been thinking about making rice pudding with quinoa instead of rice just to see how it would be and here’s a recipe which is no doubt delicious. Such beautiful light, it’s amazing how every beach has different light, different sand, a different atmosphere. This is very dream-like.
A celebration of life & all things good. How sweet M is. Love the twist to the pudding & love how you try and bring healthy changes into your everyday life Aran.
baby so cute!

I love the idea of putting quinoa in a dessert, it is one of my favorite grains. The Incans considered it the mother of all grains and certainly your recipe proves that.
- Columbine Quillen
Looks very yummy, would love to try this! :)
Is that home made ginger ale with a sprig of thyme in it? YUM.
niiki- it’s homemade lemonade with thyme. ginger ale would be good too!
You have a beautiful blog! Tambien a mi me encanta arroz con leche, y tambien, despues de 3 preciosos hijos (mi ultimo nacio en Octubre ’09) necesito cuidarme. I will definitely try this with quinoa and berries! Gracias and keep writing!
Saludos!
This looks beautiful, and better yet I have all of the ingredients (except the fruit) at home!
These photos are so beautiful! Absolutely breathtaking photography (and food)!
Truly, what a lovely post. I will make the Quinoa pudding this weekend. Thank you for briefly transporting me to a wind-swept beach. It was just where I needed to go.
What a beautiful blog. The photos are lovely and the recipes look great! Thanks i’m definitely subscribing!
Esta receta me ha gustado mucho Aran (por obvias razones, arroz con leche tambien es uno de mis postres favoritos).
Espero encontrar quinoa por aca para hacer este postrecito a la gluten free.
ps. tu beba esta HERMOSA.
I just made this tonight and it was wonderful! I can’t wait to make it again when the strawberries are at their peak flavor. Thanks for another great recipe. I’m looking forward to the millet tea cakes!
Aran, I love your blog and you bring so much beauty to the world with your food and your photos… I’m sorry to sound in any way off, but I have to ask you: please don’t carry your baby facing forward!!!!!
The forward facing carry in any baby carrier places pressure on the pelvis and spine. When your baby is facing forwards with legs unsupported, the baby’s back is essentially arched instead of rounded. The center of gravity is different which makes the carrier tend to compensate when walking as well. Some sites that sell baby wraps and carriers advise you to only use this hold for a limited amount of time and that no developmental damage will occur if the baby is not placed in this position for hours on end. I believe that any pressure on little developing hips and spines is undue. Moreover, all the weight is essentially in the baby’s most sensitive place. When your baby is facing forward his legs as well are not supported. Your baby’s legs should be pulled up to a ninety degree angle. This is possible only if the fabric covers the whole back of the thigh, virtually up to the backside of the knee. It also does not provide good head and neck support, which is most desirable when your baby falls asleep. Of course it is nice for your baby to be able to see the world. However, in the front carry your baby can’t turn away if the environment becomes too overwhelming. You cannot see your baby’s face and it’s tougher to read your little one’s cues. It’s not a good position for either mom or baby.
ok… sorry.
Sol- i wasn’t aware of that. we don’t usually carry her like that for long periods of time but it’s always good to know. thank you!
DELICIOUS! I love experimenting with different forms of grains to make sweet things like pudding and hot cereals! I will be making this upon arrival at home…all the ingredients are on hand! And in general thank you so much for all your LOVELY, healthy recipes with gorgeous photos!
What a fantasic idea, I love quinoa, and think this recipe looks just delicious, and pretty healthy too. thanks, I shall be trying it soon. Your pics are inspirational. Thanks
I wanted to ask about the drink, but I just saw your reply in the comments here. I’ll try that. I have a lot of thyme in my garden but it’s probably my least favorite herb, and I still haven’t found a way to use it. Of course, lemon season is almost finished …
Love your photos! So inspiring!
Will keep an eye on your blog from now on!
I’m just in the beginning with my own blog so it’s great to pick up new ideas:) If you have a second have a look at http://www.kristinhove.com
Thanks !
Hola Aran !

Have you ever tried incorporating various flavors into the pudding?
We have a favorite rice pudding shop in our neighborhood in San Francisco, and they always have great flavors – pumpkin, nutella, lemon, creamsicle, etc. I was wondering if you had any input on adding flavor to your quinoa pudding.
I’ve made it twice now and my boyfriend always fights me over the last serving!!
Elizabeth- i haven’t but i will next time. nutella sounds particularly lovely right now! thanks!
I made a very similar spin on mango sticky rice using quinoa, coconut milk, sugar and mango. It was delicious. I will try your pudding next. Thanks!
I loved your recipe so much i decided to push the envelope further: I used glutinous millet and coconut milk and cream, and the result was LUSH!
http://zaatarland.blogspot.com/2010/05/millet-coconut-milk-pudding.html
I’m in college in Boulder, Colorado, going to a school of mostly vegetarians and vegans. When it comes to time for dinner parties, I have to be very clever with the dishes I decide to create! I made this beautiful recipe with soy milk as a substitute. I loved it from the very beginning, but I was worried about the teenage, picky boys that would be tasting it…needless to say, they gobbled it up before most of us could get a spoon in! Delicious!
It was a hit at a potluck…everyone who tried it seemed to love it! Thanks so much!
I have made this 3 times since your post as my husband loves it! Last time I substituted ½ the Quinoa for Amaranth and topped it with Blue Berries and Raspberries.
I love qunioa! What a great way to use it!
IM Wondering, has anyone substituted sugar for Stevia?
