Strawberry Picking Part Two
If you read my previous post, you know we went strawberry picking last weekend. We brought so many home that we have been preparing strawberries in every way imaginable. Our freezer is full of bags of frozen strawberries and all kinds of strawberry goodies, like this strawberry sorbet. I hope I am at least making you dream of summer.
Strawberry shortcake is one of my favorite desserts, so of course I had to make it right away while the strawberries were still fresh and juicy. Buttermilk biscuits, accompanied by macerated strawberries, strawberry sorbet and creme fraiche and vanilla bean cream. We had this on Valentine’s night while watching a sort of cheesy, but perfect romantic comedy. Not bad, I say.

Buttermilk Biscuits
225 grams flour
40 grams sugar
9 grams baking powder
2 grams salt
75 grams butter, cubed and cold
125 grams buttermilk
1 egg yolk
Mix the flour, sugar, baking powder and salt into a bowl. Add the chilled and cubed butter and coat it with the dry ingredients. Quickly start working the butter into the flour with your fingers. We want to break it down to small pieces but leaving some chunks.
Mix the buttermilk and the egg yolk together and add it to the dry ingredients. Fold until the dough comes together. Do not overwork it or the dough will be tough. Transfer the dough onto a lightly floured surface and roll to about 1/2″ thickness. Cut with cutters and place the biscuits on a sheetpan lined with parchment.
Refrigerate the biscuits for a couple of hours (or you can freeze them at this point).
Brush tops with egg wash and sprinkle coarse sugar on top. Bake at 375F for about 15 minutes until they are golden brown.
Macerated Strawberries
Wash and cut strawberries. Place them in a clean bowl and sprinkle some sugar over them. Toss them and let them sit at room temperature for about two hours or until the natural juices start to come out.
If you want, you could add a bit of kirsch, framboise or eau de vie at this point.
Strawberry Sorbet

500 grams strawberry puree
105 grams water
75 grams sugar
75 grams atomized glucose
1.5 grams sorbet stabilizer
In a small saucepan, bring water to a boil. Add the atomized glucose and bring it to another boil. Ad the sugar and stabilizer that have been previously mixed together.
Remove from heat and transfer to a clean bowl. Let it cool in the refrigerator overnight.
The next day, mix the strawberry puree with the syrup and churn in the ice cream machine. Freeze.

We could almost play dominoes with the shortcakes and strawberries they are so cute! I think what I love the most about strawberried are their flowers and flower buds. They should adorned every birthday cake made in February!

Strawberry season is of very short duration here. We get good ones for about a month, and we just eat it up as it is or in a shake. But I know I will have some variety next time, thanks to you:). Great news! Isn’t that like icing on the cake? Two honors one after the other – good for you and way to go!!

Here I was being thankful living in balmy Vancouver with flowers coming up and no snow, mild sunny days. But now I’m depressed because I have another 4 months before I can enjoy a strawberry around here. And your photos are really making me crave a dish of balsamic marinated strawberries.

The smell of a handful of ripe strawberries has got to be one of the most intoxicating scents ever. Congrats for featuring on the list!

well, you know, up North from you, where the temperature is going to be below 20 tonite (that’s – 7 C), strawberry season is months away. But didn’t I have the foresight to make lots of sorbet (including strawberry) in the summer and I still have (a little) in my deep freezer?

Your sorbet recipes keep making me want to own an ice cream maker. Do you have any tips for making it without one?
Also, you asked how my chocolate and meyer lemon cake worked out. I had meyer lemons from my tree but since my son decided he wasn’t a lemon fan on my first version, I made the second version with enough eggs, and it was wonderful that time! I used the first batch of very cookie-like cake for a chocolate crust on cheesecake.
The second time I substituted pomegranate jelly for the lemon juice (next time I’ll use pomegranate juice for a stronger flavor).
I made the milk chocolate chantilly into stars with a little mold and my son thought those were really neat. I sprinkled pomegranate seeds over the top.
I made two cakes; I made one as an 8 inch round and the second as a 6 inch round. I served the 8 inch for the party. My grandmother’s birthday is the day after my son’s birthday. As she was eating her piece, she said, “All I need now is another smaller one of these for tomorrow.” I was planning on us eating it, but when she said that, I pulled it out and put on the stars and seeds and a candle and we sang to her too! She was delighted!
So, you made two birthdays for us! A four year old’s AND his great-grandmother’s!

Oh, more strawberries… *swoon* There is really nothing quite so lovely as picking strawberries on a farm with little kids and watching them enjoy a few of the juicy, sweet fruits right there. We went picking with our friends’ two boys in California before we moved to Colorado and it was such a delight. The sorbet looks so delicious from here. You know… your little man is just precious and adorable. He must have some beautiful parents :)
