roasted pears for winter days
We are in the depths of darkness in Seattle.
Days are short. Nights longer and longer.
We have been enjoying snow in the mountains. Soups and stews are in order and also roasted fruits.
I have been photographing recipes for The Pantry here in Seattle (if you are in the area and have never checked out their classes, you should immediately). Last week, Brandi and I met in my studio to cook and photograph roasted pears with mascarpone, butterscotch and toasted almonds. Probably one of those classics that everyone should make at least once in winter time. Hopefully, more.
